<h2>Il burger di tempeh e barbabietola è ricco di proteine vegetali, è rosso vivo ed è buonissimo</h2>



<p>Il tempeh (chiamato anche carne di soia) è una sorta di panetto creato dalla fermentazione di legumi data da un fungo in abbinamento a una soluzione di aceto. </p>



<p>Durante la fermentazione il fungo sviluppa una patina di miceli bianchi che avvolge i legumi e li compatta tra loro, in modo che mantengano una forma piuttosto solida, che una volta pronta può essere anche facilmente tagliata a fette. </p>



<p>Dunque, se il tempeh classico e tradizionale Indonesiano è sempre stato a base di fagioli di soia, oggi lo si trova nei banchi della grande distribuzione o dei supermercati del biologico anche a base di legumi come piselli, ceci o anche lupini. </p>



<h3>Il sapore del tempeh ricorda un mix tra noci e funghi ed è piuttosto difficile da definire. </h3>

<p>Certo l’odore non è dei migliori perché la fermentazione porta chiari sentori di ammoniaca e quindi è un alimento che va consumato cotto, dopo una accurato trattamento di marinatura o combinazione con altri ingredienti che lo insaporiscano. </p>



<h2>Risulta un po’ difficile da cucinare e se lo acquisti senza avere una ricetta chiara e sicura che ti indichi come trattarlo, è molto probabile che lo troverai rivoltante. </h2>



<p>Nella ricetta dei nostri <a href="https://toh-magazine.com/2020/10/veggie-burger-toh-magazine/">burger</a> dovrai prima cuocerlo per un paio di minuti al microonde in modo da poterlo sbriciolare grossolanamente, questo permetterà ai burger di avere una consistenza “carnosa” e non sembrare una semplice polpetta di verdure tritate.&nbsp; </p>



<p>Poi, la barbabietola, l’olio, l’aglio , il sale e il pepe saranno la marinatura che durante il tempo di attesa in frigorifero lo insaporiranno per rendere i burger davvero gustosi. </p>



<p>Naturalmente puoi aggiungere le spezie che preferisci per rendere questa ricetta più simile ai tuoi gusti: peperoncino, paprika affumicata, un cucchiaino di fumo liquido, erbe aromatiche e così via. </p>



<p>L’albume dell’uovo sarà l’addensante che in cottura manterrà compatti tutti gli ingredienti. </p>



<p>Non appena tolti dal forno, però, i burger vegetali tendono ad essere molto fragili, rischiando di rompersi; per queso motivo ti consiglio di lasciarli raffreddare sulla teglia di cottura prima di utilizzarli per farcire dei panini.</p>

<p class="has-pale-cyan-blue-background-color has-background">Ingredienti per 4 burger: 150 g cipolla rossa, 300 g tempeh, 180 g barbabietole crude, 70 g noci, 2 albumi d’uovo, 4 cucchiai di olio, 6 cucchiai di pane grattugiato &#8211; 1 cucchiaio di semi di sesamo tostati &#8211; 1/2 cucchiaino di aglio secco &#8211; Qb sale e pepe</p>



<p>In un padellino fai soffriggere la cipolla rossa, finemente tritata, fino a quando non sarà traslucida. Metti da parte in una ciotola.</p>



<p>Metti il tempeh nel microonde alla massima temperatura per 2 minuti, poi sbriciolalo grossolanamente, con le mani, nella ciotola con la cipolla.</p>



<p>Aggiungi le barbabietole crude grattugiate e le noci tritate grossolanamente.</p>



<p>Aggiungi anche l’aglio secco, i semi di sesamo tostati e leggermente pestati.</p>



<p>Infine versa l’olio e gli albumi nella ciotola. Mescola energicamente con una forchetta per amalgamare bene il tutto. Aggiungi il pane grattugiato e aggiusta di sale e pepe secondo i tuoi gusti. Mescola ancora e lascia riposare il composto per dieci minuti. </p>



<p>Dividi il composto in parti uguali e forma 4 burger, sistemali su un piccolo vassoio ricoperto di carta da forno e conservali in frigorifero per almeno un paio di ore.</p>



<p>Cuoci i burger in forno ventilato per circa 20/25 minuti a 200°. </p>



<h2>Ricorda che non appena usciti dal forno, i burger saranno molto delicati e rischieranno di rompersi, per cui lasciali raffreddare sulla teglia senza toccarli, in questo modo manderanno la loro consistenza e saranno più facili da maneggiare. </h2>
