<p>I rizomi del tubero di topinambur sono facilmente reperibili nei banchi dei mercati rionali e anche della grande distribuzione; sono bitorzoluti, di un colore marrone dorato che sfuma nel viola e hanno una polpa croccante, bianca, il cui sapore tenue ricorda quello dei cuori di carciofo, difatti vengono anche chiamati Carciofi di Gerusalemme. </p>



<p>Sono ottimi nelle zuppe, cotti al forno ma anche crudi, affettati sottili e conditi con olio limone e prezzemolo. </p>



<p>Questa è una <a href="https://toh-magazine.com/2020/10/veggie-burger-toh-magazine/">ricetta</a> molto semplice per trasformarli in pochi minuti in un pietanza calda di conforto, perfetta per queste giornate autunnali.</p>



<p>Gusta la vellutata di Topinambur con il condimento di olio aromatizzato alla salvia e per un tocco più gourmet, prova ad aggiungere un po&#8217; di polvere di liquirizia.</p>

<p class="has-black-color has-text-color"><strong>Vellutata di Topinambur <br></strong><em>Ingredienti per 4 persone</em><br><br>· 600 g di topinambur pulito<br>· 1 porro<br>· 1 patata piccola<br>· 1 litro di brodo vegetale<br>· 1 mazzetto di salvia fresca<br>· Olio extra vergine di oliva</p>

<p>Metti in un piccolo recipiente 10/15 grammi di salvia e aggiungi 50 grammi di olio. Frulla con il frullatore a immersione e metti da parte. Lascia a riposo per almeno 30 minuti.</p>



<p>Versa un po&#8217; di olio in una casseruola e aggiungi il porro tagliato a rondelle. Fai cuocere per un paio di minuti. Aggiungi i rizomi di topinambur, puliti e tagliati a pezzetti. Unisci anche la patata pelata e tagliata a pezzetti. Versa il brodo vegetale nella casseruola e lascia sobbollire, a fuoco dolce, per 30 minuti circa.</p>



<p>Filtra la salvia frullata con un colino a maglia fine e conserva l&#8217;olio aromatizzato.</p>



<p>Con il frullatore a immersione frulla la zuppa direttamente nella casseruola, fino a creare un vellutata cremosa.</p>
