<h4>Tortelli alla lastra hanno un ripieno di zucca e patate o erbette e pecorino, quel’è il tuo preferito?</h4>



<p>Questi tortelli cotti alla lastra ricordano lo street food romagnolo di cassoni o crescioni (il nome cambia a seconda delle zone in cui ci si trova) che mangiamo d’estate, durante la vacanze sul litorale riminese e che troviamo nei numerosi chioschi che preparano e vendono piadina fatta in casa. Spostandosi sull’appenino, al confine con la Toscana, tra la provincia di Forlì e la provincia di Arezzo, sarà facile imbattersi in qualche cartello che indica un chiosco o un locale in cui preparano tortelli alla lastra.</p>



<h4>La ricetta di tortelli alla lastra ripieni prevede un impasto molto più semplice della piadina ed è a base di sola farina, acqua e sale; il ripieno classico è quello a base di zucca e patate o di erbette. </h4>

<p>Questi tortelli, che sono nati come cibo da viaggio per i pastori che transumavano durante l’estate in cerca di pascoli freschi per il bestiame, si conservano diversi giorni al fresco in frigorifero oppure li puoi addirittura congelare e conservare in freezer per quando ne avrai voglia. La particolare cottura avviene su una lastra di pietra refrattaria che dona alla pasta del tortello una ruvidità e croccantezza caratteristica. Senza lastra di pietra ci si può accontentare di cucinarli sul fondo di una padella antiaderente, facendo attenzione alla temperatura per non rischiare di bruciare la pasta senza aver ben riscaldato l’interno.</p>

<p>Prepara l’impasto aggiungendo acqua alla farina di grano tenero salata con un pizzico di sale fino, un poco alla volta, fino a ottenere un’impasto liscio ed elastico. Coprilo con pellicola e mettilo in frigo a riposo.</p>



<h4>Nel frattempo prepara due ciotole con le farciture, schiacciando la zucca e le patate con una forchetta e tritando le erbette col coltello; mescola gli ingredienti e metti da parte.</h4>



<p>Stendi l’impasto sottile con il matterello o con la macchina per la pasta, creando delle strisce; disponi un po’ di farcitura su una striscia di pasta, copri con una seconda striscia di pasta, schiacciando bene i bordi con le mani, per farli aderire. Ritaglia dei tortelli di circa 10cm x 15cm utilizzando la rotella taglia pasta. Infine chiudili bene usando i rebbi di una forchetta.</p>



<p>Cuoci i tortelli sulla lastra di pietra posta su un fuoco medio, se non hai la lastra di pietra&nbsp; cuocili sulla padella anti aderente facendo attenzione a non bruciarli.</p>
