<h3>Ai tuoi amici più golosi non far sapere quando cucini la galette col parmigiano e con le pere</h3>



<p>Le <a href="https://toh-magazine.com/2021/08/galette-pomodorini-recipe-ricetta-provola/">galette</a> sono torte a base di una pasta piatta che raccolgano frutta cotta, creme o conserve. In Francia la galette può anche essere la crêpe bretone a base di grano saraceno, con un ripieno salato a base di groviera, formaggi e uovo o prosciutto cotto. </p>



<h2>Questa mia galette è un po’ dolce e un po’ salata e mi piace servirla al brunch, magari con una insalata fresca o un po&#8217; di rucola. </h2>



<p>Se vuoi preparare una pasta brisée, fatta in casa, non sarà difficile: prendi 1 parte di farina, aggiungi 1/2 parte di burro freddo e 1/4 del peso della farina di acqua fredda. Crea una pallina di impasto e stendilo. Altrimenti, per essere più veloce puoi acquistarla già pronta, in rotolo, la supermercato.</p>



<p>L&#8217;amido è un ingrediente importante perché in cottura addenserà i succhi delle pere e del limone creando, col burro fuso, una vera e propria cremina deliziosa che andrà a fondersi col parmigiano che avrai spolverizzato sul fondo.</p>



<p>Lasciala cuocere lentamente, sulla parte bassa del forno e nel caso l&#8217;impasto dovesse abbrustolirsi troppo, coprila con alluminio e scoprila solo durante gli ultimi minuti di cottura, per darle colore e lasciare che la spennellatura di uovo la renda dorata. </p>

<h2>La galette di pere e parmigiano è buona calda, appena uscita dal forno, ma anche fredda e conservata in frigorifero. </h2>



<p>Se vuoi puoi aggiungere un formaggio nella fase finale, che possa fondere, come uno chevre o un taleggio; oppure puoi aggiungere qualche noce tritata per dare un po&#8217; di croccantezza ad ogni morso</p>



<p class="has-pale-cyan-blue-background-color has-background"><strong>Ingredienti:</strong> 1 rotolo di pasta brisée &#8211; 300 g pere bio &#8211; 3 cucchiai amido di mais &#8211; 1 limone (solo il succo) &#8211; 2 cucchiai miele &#8211; 35 g burro fuso &#8211; 1/2 cucchiaino sale fino<br>50 g parmigiano grattugiato. </p>



<p class="has-pale-cyan-blue-background-color has-background"><strong>Per decorare</strong>: 1 uovo &#8211; Scaglie di parmigiano &#8211; Pepe nero</p>



<p>Affetta le pere molto sottili, mantenendo la buccia, mettile in una ciotola. Aggiungi il succo di limone, il miele, il burro fuso, l’amido di mais, il sale e mescola con le mani. Lascia marinare per qualche minuto.</p>



<p>Stendi il rotolo brisée su una teglia, spolverizzaci sopra il parmigiano, mantenendo una circonferenza di impasto pulito di circa 1 cm. </p>



<p>Sistema le fettine di pera sul parmigiano grattugiato. Arrotola il contorno pulito dell’impasto, creando un bordo arrotolato su tutta la circonferenza della galette. Sbatti un uovo e con pennello pennella tutto l’orlo della galette.</p>



<p>Accendi il forno statico a 180° e cuoci la galette per circa 30/35 minuti.</p>
