<h3>Gustosi bocconcini di tofu e mazzancolle ricoperti da una croccante gratinatura che profuma di limone e snack di alghe</h3>



<p>Preparare dei bocconcini croccanti da aggiungere a una insalata di foglie verdi e tenere è un modo per preparare un piatto leggero ma appetitoso. </p>



<p>In questa insalata io ho usato un <a href="https://toh-magazine.com/2021/04/gyoza-di-verdure-e-tofu/">tofu</a> piuttosto compatto già aromatizzato, ma se hai in casa un tofu firm bianco, al naturale, potrai creare una marinatura con gli ingredienti che preferisci: ad esempio a base di salsa di soia, mirin e un po&#8217; di zenzero grattugiato. </p>



<p>La gratinatura, al contrario della panatura, la prepari senza uova e la cuoci in forno ventilato; per questo motivo aggiungi fin da subito un po&#8217; di olio di semi che in cottura trasformerà il pane grattugiato in una una panure croccante e saporita. </p>



<p>Per preparare la mia, oltre alla scorza di limone e il pepe nero che sono due ingredienti che amo in abbinamento, ho aggiunto uno snack di alghe croccanti al naturale che puoi trovare sia nei negozi che vendono cibi asiatici che nel reparto etnico della grande distribuzione. </p>



<h2>Già qualche anno fa, Michelle Obama, confessa golosa di patatine fritte in busta, consigliava lo snack di alghe o di verdure croccanti in sostituzione alle più caloriche chips dei sacchetti che sono sempre irresistibili! </h2>



<p>Se non le hai mai provate prova a dar loro una chance: sono molto gustose e poco caloriche, ricche di potassio, magnesio, ferro e iodio accontentano anche i vegani sempre alla ricerca di fonti di vitamina B12. Ne esistono di vari tipi sia al naturale che aromatizzate: agrodolci, al sesamo o alla cipolla… o addirittura alle seppie grigliate!</p>

<p class="has-luminous-vivid-amber-background-color has-background"><strong>Ingredienti per 4 persone:</strong> 180 g tofu compatto &#8211; 200 g mazzancolle<br><strong>Per la gratinatura:</strong> 80 g pane grattugiato &#8211; 1 cucchiaio colmo di snack di alghe croccanti &#8211;<br>la scorza grattugiata di mezzo limone &#8211; una generosa macinata di pepe nero &#8211; 1 pizzico sale &#8211; 1 pizzico aglio secco &#8211; 4 cucchiai di olio di semi di girasole</p>



<p>Accendi il forno ventilato a 220°. Versa gli ingredienti per la gratinatura nel bicchiere di un robot da cucina e frulla per qualche secondo, utilizzando la funzione pulse.</p>



<p>Versa la gratinatura in una ciotola larga e mettici dentro anche le mazzancole pulite e il tofu tagliato a cubetti piuttosto grossi. Fai pressione con le mani in modo che la marinatura aderisca agli ingredienti.</p>



<p>Sistema tutto su una teglia ricoperta da carta da forno e lascia in forno fino a completa doratura, circa una decina di minuti nel mio forno.</p>

<h2>Dopo i bagordi delle feste è il momento di tornare leggeri con i nostri noodles in dashi di funghi shiitake</h2>



<p>Forse nemmeno in Giappone è facile trovare un dashi fatto a regola d&#8217;arte, grattugiando il tonnetto essiccato e affumicato nell&#8217;acqua calda. La polvere di tonno kezurikatsuo, addizionata con il magico glutammato, è ormai facilmente reperibile nei negozi che vendono cibo giapponese o nel reparto etnico della grande distribuzione. E proprio questo preparato, agli inizi del secolo scorso, aprì i palati a riconoscere il quinto gusto mai considerato fino ad allora: l&#8217;umami.</p>



<h3>Se non trovi i funghi shiitake freschi, potrai utilizzare quelli essiccati, molto più facilmente reperibili, ma dovrai pazientare più a lungo prima che siano completamente cotti.</h3>

<p>Nel caso, aumenta un po&#8217; la dose dell&#8217;acqua che potrebbe evaporare durante la cottura. Per quanto riguarda il tofu ti consiglio di acquistare quello chiamato &#8220;silken&#8221; (setoso) proprio per la sua consistenza molto morbida e vellutata.</p>



<p>Scegli la pasta che preferisci tra noodles all&#8217;uovo, soba di grano saraceno o anche i &#8220;glass noodles&#8221; quelli molto fini e <a href="https://toh-magazine.com/2021/01/shirataki-di-konjac-con-mazzancolle-e-verdure/">trasparenti</a> a base di farina di riso e tipici della cucina cinese e coreana. </p>



<h3>Così, potrai gustarti un&#8217;ottima zuppa confortante, leggera e senza sensi di colpa dopo le scorpacciate caloriche delle feste di fine anno.</h3>



<p class="has-pale-cyan-blue-background-color has-background">Ingredienti per 2 persone: 150 g noodles &#8211; 100 g di funghi shiitake freschi (o 50 g se secchi) &#8211; 3 cipollotti &#8211; 200 g di tofu &#8211; 1 pezzetto alga kombu essiccata &#8211; 1 pezzetto zenzero fresco &#8211; 4 cucchiai mirin &#8211; 4 cucchiai salsa di soia &#8211; 2 litri di acqua &#8211; Qb polvere dashi -Qb semi di sesamo tostati</p>



<p>Prepara il brodo mettendo a sobbollire lentamente l&#8217;acqua con i funghi, l&#8217;alga, il pezzetto di zenzero e 2 cipollotti a pezzetti; Lascia cuocere per 20 minuti con il coperchio poi aggiungi la polvere di dashi (leggi la quantità utile sulla confezione di dashi che hai acquistato), salsa di soia e mirin. Mescola tutto e spegni il fuoco.</p>



<p>Filtra il brodo e conserva funghi e alga; getta lo zenzero e i cipollotti cotti.</p>



<p>Quando il brodo sarà filtrato e limpido riportalo a bollore e cuoci i noodles. Nel frattempo taglia a piccole fette il tofu e a strisce l&#8217;ultimo cipollotto fresco rimasto. Taglia a strisce anche l&#8217;alga kombu cotta e metti da parte.</p>



<p>Prepara le ciotole con i noodles, aggiungi funghi cotti, cipollotto fresco, un po&#8217; di alga e qualche fetta di tofu. Versaci sopra il brodo dashi caldo, spolvera un po&#8217; di semi di sesamo tostati, servi a tavola e… <a href="https://www.instagram.com/tohmagazine/">TOH! </a>MANGIALO!</p>
