<h3>Il salmorejo è la zuppa fredda andalusa, rinfrescante e gustosa, perfetta per combattere le temperature torride dell&#8217;estate</h3>



<p>Il Salmorejo è una zuppa tradizionale andalusa, spesso servita come tapa, e originaria della città di Cordoba. Molto simile e più famoso del salmorejo è il <a href="https://toh-magazine.com/2021/08/gazpacho-ananas-recipe-food-healthy-lgbt-toh-magazine/">gazpacho</a>, che risulta però più difficile da digerire per la presenza di peperoni e cetrioli crudi tra gli ingredienti. </p>



<h3>Il salmorejo è composto da soli pomodori e pane, condito con olio sale e pepe. </h3>



<p>Alcune ricette prevedono anche un po&#8217; di aceto ma io preferisco ammollare il pane direttamente nel frullato di pomodori. Viene tradizionalmente servito in abbinamento a uova sode tritate grossolanamente e jamon serrano (simile al nostro prosciutto crudo) tagliato a fette o a piccoli cubetti. </p>



<h3>Il pane più utilizzato a Cordoba per preparare questa zuppa è il Pan de Telera, un pane molto simile alle nostre pagnotte mantovane, cioè con una mollica molto spessa, senza alveoli. </h3>

<p>Se vuoi prepararlo velocemente e non hai delle pagnotte mantovane rafferme, prova a utilizzare delle pagnotte Coppia Ferrarese, che troverai facilmente già essiccate e confezionate in molti supermercati.</p>



<p class="has-luminous-vivid-amber-background-color has-background"><strong>Ingredienti per 2 persone:</strong> 500 g pomodori maturi &#8211; 1 spicco di aglio piccolo &#8211; 200 g di pane raffermo &#8211; Qb olio extra vergine di oliva &#8211; Qb acqua &#8211; Qb sale e pepe;                                      <strong>Per decorare:</strong> 2 Uova sode tritate &#8211; prezzemolo fresco tritato</p>



<p>Metti in una ciotola capiente i pomodori (se sono grandi tagliali a pezzi) l&#8217;aglio, un po&#8217; di olio, sale e pepe. Frulla tutto con il frullatore a immersione per qualche secondo.</p>



<p>Aggiungi il pane raffermo a pezzi e lascialo ammollare nella polpa di pomodoro per qualche minuto. Frulla di nuovo la polpa Econ il pane fino a ottenere una crema piuttosto spessa. </p>



<p>Infine, sempre frullando, aggiungi l&#8217;acqua a poco a poco fino a ottenere la consistenza che preferisci. Metti il salmorejo in frigorifero e lascialo raffreddare completamente. </p>
